This is exactly what Karen did! She is learning how to prepare Fast, Delicious and Nutritious food that will change her body shape. She is enjoying the journey so much, that she has started preparing lunches for everyone in her office. Karen and husband Peter have an office at the Portland Business Hub, sharing the space with several other businesses.
This week at our nutrition class, Karen presented us all with a copy of her Vegetable Bean Soup, along with a lovely little sprig of Rosemary in the corner. She showed us how she used the slow cooker to make the soup. It just happened to be ready in time for lunch for all who was in the office. She even made it vegetarian to cater for one of the girls, and just added some chicken to her bowl.
You see, nutrition is only sometimes about food. It is mainly about being prepared and having nutritious food available at ALL times. When you are busy at work, it is very easy to just run down the street and grab a pie or the nearest junk that is available. Karen is making sure that doesn't happen to her and Peter.

Here's Karen's recipe for you all to try.
Karen's Quick Vegetable & Bean Soup
1/2 cup celery, chopped
1/2 cup carrots, chopped
1/2 cup red capsicum, chopped
1 cup zucchini chopped
1 cup mushrooms
1 tin of red kidney beans
1 tin of cannellini beans
2 x 400g tins crushed tomatoes
2 cups homemade vegetable stock (just the water from the bottom of the saucepan from steaming the veggies the night before!)
2 teaspoons turmeric, 2 sprigs of rosemary
1 heaped ts crushed garlic.
Cook in slow cooker for approximately 4 hours. Add protein of your choice for extra muscle repair.
