spice up your life
I have been road testing a few different recipes over the summer holidays. If they make the cut, I will add them to my bulk cook-ups to go in the freezer for the back to work crazy times!
This recipe is adapted from a Thermomix recipe - altered to suit everyday life and so it has the best nutritional content to help make you lean.
Cajun Chicken with Pineapple Salsa
600 g lean chicken breast cut into cubes
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp dried thyme
1/4 tsp ground cayenne pepper
1/4 ts salt
1 pinch ground black pepper
1/2 avocado sliced
130 g light coconut milk
20g lime juice
1/2 tsp garlic powder
1 ts fine sea salt
1 pinch black pepper
10 g fresh corriander
1 shallot quatered
1 red chilli, halved and deseeded
180g fresh pineapple, cubed
20g lime juice
1/2 tsp fine sea salt
Combine the spices with the chicken in a bowl and toss. Refrigerate for 10-15 minutes.
Combine the ingredients for the avocado cream in a food processor and blend. Store in a bowl.
Combine the ingredients for the salsa in a food processor and blend. Store in a bowl.
Cook the chicken in a hot pan on the stove top. Spoon onto a plate and drizzle some of the avocado cream over the chicken and place a few spoons of salsa on top.
Serve with your own choice of steamed or roasted veggies. I added some rice to my meal for after a workout.
