A plate of goodness in under 7 minutes
I had the huge honour of recently been asked to present at a workshop for teens about improving self image and confidence.
It was a small but interested group of fabulous girls who were like sponges when I explained the terrors of dieting, the detail of reading labels and the joy of cooking Fast, Delicious and Nutritious food to fuel their bodies.
The timer was set, and we made Chile Con Carne in under 7 minutes! YES! You read correctly. It took under seven minutes to fill this huge frypan with delicious food that was enough to feed a football team.
The premise is that "you always eat what is nearest", so if you have a steady supply of food available in the fridge or pre-cooked meals in the freezer, there is always something there to fill that hungry belly when the kids get home from school, after sport or a late night snack.
So, here is the simple recipe that anyone can follow.
Chile Con Carne
1 kg lean beef mince
1kg bag of frozen mixed vegetables
3 cups sliced mushrooms
whole diced onion
4 cups spinach
1 heaped tablespoon minced garlic
1 heaped teaspoon chile flakes
1 teaspoon cumin
2 tins crushed tomatoes
1 jar tomato passata
2 tins drained kidney beans
Brown off the meat in a hot frypan. Add spices and onion and stir to combine. Add the tin tomatoes and passata and stir to combine. Add the frozen veg, mushrooms and kidney beans and stir. Place on the lid and allow to simmer for 20 minutes on a low to medium heat. Add the spinach leaves and stir and let sit for 5 minutes before serving. You can serve as it is or with steamed rice.
